This is one of the healthier meals that Joel and I like to make when we just aren’t feeling heavy food like pasta or pizza. It’s extremely easy to make and can be used for a quick lunch if prepared in advance. You just grab the ingredients, throw it together, and you’re done.
1 lb ground white turkey meat
1 teaspoon salt
2 tablespoon chili powder
1 tablespoon paprika
1 teaspoon cumin
1 teaspoon garlic powder
In a medium skillet, bring to medium-high heat with enough water to cover the bottom of the pan.
Add the seasonings in and swirl around.
Add the turkey and mix until turkey is no longer pink – about 7-8 minutes.
Cilantro Lime Dressing
Juice of 1 small fresh lime
1 medium whole garlic clove
1/4 teaspoon of salt
1/4 teaspoon of chipotle powder
1 tablespoons extra virgin olive oil
1/4 cup of sour cream
1/4 cup of mayo (I use Trader Joe’s)
1 tablespoon fresh cilantro leaves, chopped
Place all ingredients in a food processor or blender to combine and salt to taste if you need more.
The dressing is made to be very thin and soak up into the salad. You can add mayo to thicken if desired.
Fresh salsa – (toss diced tomato without seeds, diced onion, lime, and jalapeño if desired)
Green onion, chopped
Bell pepper, diced
Cilantro lime dressing
Assemble all ingredients together and enjoy!
