Lemon Rosemary Chicken

This recipe has been a classic staple in our home for years. It’s easy to make for 2 people and it’s the perfect balance of healthy and flavorful. Another one of our go to meals when we are both wanting something with less heavy carbs. The potatoes are a little heavier, but they balance perfectly with the chicken.

2 Boneless, skinless chicken breast
3 Red potatoes, cubed
2 tablespoons of olive oil
1 lemon, halved
1 pinch of red pepper flakes
3 medium garlic cloves
2 fresh rosemary sprigs
1/2 teaspoon of salt
1/2 teaspoon of pepper

Boil a medium pot over medium-high heat.
Once boiling, at the chopped potatoes and boil for 10-12 minutes, or until potatoes are easily poked.
On a cutting board, chop 1 rosemary sprig, red pepper flakes, and garlic until completely minced and fragrant.
In a medium bowl, add the olive oil, lemon juice (save the lemon shells for later), salt, pepper, and herbal mix.
Add the chicken and marinate for at least 1 hour. The longer it sits, the more flavor it will have.
When ready to prep dinner, preheat the oven 450 degrees.
Heat a cast iron skillet over medium high with a dash of olive oil. Once its lightly smoking, carefully add the chicken, browning on each side for about 1-2 minutes. Remove chicken and add potatoes, tossing around until brown about 3-4 minutes.
Remove the skillet from the heat and add the chicken back into the pan, making room within the potatoes for the chicken to rest.
Pour remaining marinade over the dish then add the empty lemon halves and one rosemary sprig.
Bake the dish for about 8-10 minutes, depending on how thick your chicken breast are. Our chicken breast are usually pretty thin and cook through quickly. [*Note that once the chicken is removed from the oven, the chicken will continue to cook within itself, so be sure not to cook too long and dry it out. Avoid undercooking by checking the chicken after 8 minutes for any remaining pink. Place back into the oven if it’s not quite done yet. The chicken should be moist when served, but not pink.] Once the chicken is done, carefully remove from the oven
Let cool 2-3 minutes then serve and enjoy!
