This is great as a snack or topping on dishes like salads or tacos. Joel and I eat this by the spoonfuls on top of tortilla chips and it’s been a stable for years in our house.
1 jalapeño, washed and finely chopped
1 tomato, washed and finely chopped
Half of 1 red onion, finely chopped
Fresh cilantro, washed and chopped
1 Fresh lime juice
Kosher salt to taste
Roll the lime on hard surface to loosen juices then cut in half and squeeze into a bowl.
Add the remaining ingredients and season with salt to taste.
Store in fridge for a fresher taste while making other ingredients for snack.
Serve with tortilla chips or on top of tacos/salad/nachos.
