Homemade Nachos

I grew up making these with my mom. It was one of our favorite things to do together. Of course, our version was the less healthy version, but they were still wonderful memories! I decided to take our nachos recipe and put a healthy spin on it, which turned out to be so so delicious I had to share. 

 

1 lb organic beef 

1/2 teaspoon salt 

1 tablespoon chili powder 

1 tablespoon paprika 

1/2 teaspoon cumin 

1 teaspoon garlic powder 

Water to cover beef 

Baked tortilla chips 

Shredded Colby Jack cheese 

Green onions, chopped 

Shredded lettuce 

Plain Greek Yogurt (sour cream replacement) 

Homemade salsa 

Jalapeño 

 

How to cook your beef

Place 1 lb of beef into a skillet over medium heat on the stove. Add salt, chili powder, paprika, cumin, and garlic powder. Mix seasonings around with beef as much as you can, then add enough water to just barely cover the beef. Let simmer and continue stirring until water has cooked into beef. Remove from heat.

 

Nachos

Preheat the oven to 500 degrees or broil. Place desired amount of chips into an oven-safe pan. Sprinkle cheese over chips, then add a small amount of beef on top. Place pan in the oven and bake for 2-3 minutes, or until cheese is melted. Carefully remove from oven and add remaining desired toppings.
