Although next month will be my “apple theme” month, I consider caramel apples to be more of a Halloween thing. This recipe is more simple than one would think! They came out very tasty, just be sure to buy sweet apples, not gritty apples.
Makes 6 Apples
1 cup white sugar
1/4 cup condensed sweetened milk
1/4 cup evaporated milk
dash of vanilla
1/2 cup corn syrup
1/4 cup of butter
Wash apples and fill a bowl with cold water and ice. Place apples in the bowl, and let them sit in the ice bath while you make the caramel.
In a medium sauce pan over stove, melt your butter, sugar, and corn syrup. Bring to a boil, stirring often, and slowly pour in your evaporated milk and condensed milk. Add your vanilla.
Turn your temperature to medium-low and let your mix sit for 15-20 minutes, or until the color changes to the deep caramel color. While you wait for the mix to change color, dry off your apples and place a popsicle or shish kabob stick into the center (be sure to remove all stems). Once the mixture changes color, remove the pan from heat and quickly dip your apples into the caramel, one at a time, and place them on a sheet of wax paper. Let the caramel stick to the apples for a few hours, placing in the refrigerator if needed. Enjoy!
